Whole crumbed whiting - Prawn mousse filling - Herb Salad & Homemade Tartare
Ok you take a whole whiting right… butterfly, debone and then fill it with a prawn mousse. You’re turning the fish into a dumpling. Then, crumb it, deep fry it and lay it in a bed of tartare. Fucking unreal right?
Here’s the recipe…
The Whiting -
-4 sand whiting
-6 large green King prawns
-1 tbsp parsley leaves
-3 small sprigs dill
-1/2 Green chilli
-1 garlic clove
-1 tsp olive oil
-1 cup flour
-2 eggs eggs, beaten with a little water
-1 cup panko crumbs
-salt and pepper
-oil, for deep frying
Herb Salad -
-Mint leaves, parsley leaves, fennel fronds, dill fronds, thai basil leaves
-Whole pickled capers
-Lemon Juice
-Olive oil
Tartare -
-1 Whole egg
-250ml Grapeseed oil
-Cornichons
-Capers
--Wholegrain Mustard
-Dijon Mustard
-Whole Green Olives
-Dill Leaves
-Parsley leaves
-1 Lemon
-Anchovies
For the Whiting -
- Butterfly and debone the whole whiting and lay them onto paper towels, skin side down.
- Peel your prawns and pop them into a food processor, along with a few sprigs of dill, parsley, 1/2 green chilli, 1 clove of garlic, salt and a good glug of olive oil. Process for about 40 secs to a minute. You still want texture in the mix but also want it to hold together. Place mix into a piping bag.
-Pipe a log of mousse into the butterflied whiting, then fold it back up and mould back into a whiting shape.
- Dip in plain flour, then egg wash and very gently crumb, keeping the head free of crumbs.
- Bring your oil to 180 degree, then in with your whiting. Fry until rich golden brown. Let rest on paper towel and season with salt.
For the Herb Salad -
- Simply pick the leaves whole, toss with olive oil, lemon juice and capers. Serve immediately
For the Tartare -
There’s a lot of ingredients, but it’s easy. I promise.
-Finely dice the capers, cornichons, olives and anchovies
- Place your egg, a tablespoon of dijon and a good squeeze of lemon juice into a food processor or blender. Blend until pale. Drop in the herbs and give it another quick whizz
-Add your oil gradually and the mayo will become thick.
-Add to a bowl then stir through your solid ingredients and a touch more lemon juice. Salt, pepper and sugar to taste.
