The Ultimate Fish Sandwich

I’ve honestly have never had a fish sandwich better than this. It’s dumb simple.
It needs barely a handful of ingredients—but that’s the point. The focus is on the fish. Fresh reef fish is such a beautiful ingredient, it needs only the lightest touch. Treat your fresh fish well and source it responsibly and sustainably and you’ll be laughing!

Here’s what you’ll need:

For the fish:
1 slab of fresh, white reef fish.
Panko bread crumbs (crush slightly with your hands to produce a finer crumb)
Flour
Eggs
Rice Bran Oil

The sandwich:
Plain white bread (Tip top is perfect!)
A few leaves of iceberg lettuce
Chilli sauce of your choosing
Kewpie mayonnaise
Lemon

Cut your fish into a good sandwich sized piece.
Start by giving it a good coat of flour, then dip into the egg wash. Press your fish gently into the crumbs, and flip. Repeat this a couple of times until you can feel a strong coating form, and there aren’t any gaps in the crumb.
Heat a pot of rice bran oil, twice as deep as the fish, to about 180 degrees. You can just drop in a couple of crumbs and if they start vigorously bubbling, that’s generally a sign that it’s good to go.
Fry your fish until the crumb is a rich golden brown. This should take about 3 minutes.
Take it out and rest it on some paper towel and give it a generous seasoning with salt.

It basically just goes: white bread - iceberg lettuce - fish - chilli sauce - kewpie mayo - bread.
