Kingfish Ceviche

 

Ceviche of Kingfish

Serves 4*

Ingredients -

1 Kingfish fillet – skinned 

1 red onion

1 pack perino cherry tomatoes

1 lebanese cucumber

Fresh chives

Fresh coriander

1 limes

1 green chilli

1 red chilli

Good quality olive oil

 

1 pack round white tortilla chips
Cos Lettuce cups

Method -


Kingfish -
1.     Prepare your kingfish fillet by slicing 300gms of it into 1cm slices, then square cubes – Reserve in the fridge

Ceviche -
1.     Thinly slice the onions, the tomatoes, the chilli (Very thinly) and finely dice the cucumber, chives and coriander. Juice the lime and combine all the ingredients together with a good glug of olive oil. Season with salt.

2.     Once ready to serve, toss through and let sit for 10 minutes to let the fish cure

To Plate  -

1.     Serve your ceviche in a bowl and garnish with more fresh chives, fresh green chilli and coriander leaves.

2.     Serve alongside a bowl of tortilla chips and some cos lettuce cups if you fancy
